In award-winning Fairmont Singapore, in the heart of Singapore, some of the 15 food-and-beverage venues include stand-out restaurants with an international flair. One of these is Prego, not only one of Singapore’s favourite Italian restaurants, delighting connoisseurs of authentic Italian cuisine for the last two decades, but also one of the most popular spots for Sunday brunch.
Prego welcomes with a typically Italian, family-oriented dining experience, as well as a true trattoria Italiana experience – from service style to deliciously authentic Italian dishes – while a genuine trattoria ambiance emanates with Italian prosciutto and sausages hanging from the awnings, carts for wine service by the glass and rustic-style wood dining tables.
At Prego’s Sunday Semi-Buffet lunch (12.30PM to 3PM), Italian Chef de Cuisine Antonio Facchinetti presents his “Pranzo Italiano” sumptuous array of 40 rustic and traditional Italian dishes, highlighting bellissimo classics and luscious Italian dishes created using age-old culinary methods and techniques. This unique, carefully crafted Pranzo Italiano is not only an ensemble of Chef Antonio’s favourite dishes, but an epicurean homage to La Dolce Vita and nostalgic culinary journey through his beloved Italia.
Despite being away from his native Milan, Chef Antonio remains true to his Italian culinary roots and heads back home occasionally for inspiration to explore the finest, most traditional Italian favourites.
From Chef Antonio’s Pranzo Italiano, several excellent house-made pasta dishes include penne with Sicilian tuna, sun-dried tomatoes, olives and fennel oil, plus the chef’s classic spaghetti aglio e olio with mixed seafood. Further authentic Italian staples include potato gnocchi with gorgonzola, and risotto saffron with pan-seared scallops and balsamic glaze.
From succulent seafood and meat dishes, highlights include the freshest sautéed prawns served with tomato sofrito and creamy polenta and herbed roast beef with rosemary gravy.
This fantastico menu is further complemented by an equally impressive buffet of the freshest seafood, Italian antipasti and desserts. Chefs interact with diners, revealing more about the dishes, while live music performances keep the whole family entertained.
