The Deli Restaurant, a chic French-brasserie-inspired restaurant at Pullman, is home to a small but authentic selection of refined French dishes. The restaurant’s Crème “Vichyssoise” is a chilled creamy leek soup starter, inspired by the popular spa town of Vichy, accented beautifully with edible flowers and crispy leeks and served with toasted pesto baguette.

The spirit of the picturesque coastal city of Nice in the French Riviera is perfectly captured in the Salade Niçoise, starring a gloriously seared tuna steak with green beans, romaine lettuce, black olives, anchovies, cherry tomatoes, potatoes and hard-boiled eggs tossed in a light pesto dressing and topped with parmesan crisps.

Confit de Canard is a specialty slow-cooked duck leg dish of Castelnaudary in southern France that involves a two-day preparation using a centuries-old method. The Deli’s fall-off-the-bone, melt-in-your-mouth version is a contrast of warm duck leg confit coated with crunchy breadcrumbs and cold white coco bean salad (cooked for two hours) with creamy mustard dressing.
Coming soon at the restaurant is Tournedos de Boeuf Rossini, a dangerously decadent French steak dish created for and named after the legendary opera composer Gioacchino Rossini by French master chefs. This main comprises butter-seared Wagyu beef on crouton and roasted capsicum, topped with pan-fried foie gras, garnished with slices of black truffle and finished with Perigueux sauce and a side of pommes Anna (layered potatoes).
The French dishes at The Deli Restaurant, steeped in rich culinary history and cultural heritage, are best shared with friends and family over a few bottles of exquisite French wines. Bon appétit!
