In the spirit of Indonesia’s Independence Month, DoubleTree by Hilton Jakarta Bintaro Jaya introduces something special: RAASA: The Chef’s Hidden Table. Designed for just six guests, this intimate dining concept reimagines the richness of Indonesian flavours through a modern lens.
RAASA, an acronym for Rasa Asli Nusantara, celebrates authentic tastes drawn from across the archipelago. Instead of a conventional restaurant setting, guests are invited into the very heart of the hotel’s kitchen. Behind a discreet door, the dining space is not a traditional room but the chef’s inner domain. Here, the hum of pans, the energy of creation and the plating artistry unfold in full view, turning dinner into a live performance.
The inaugural evening takes place on 23 August 2025 at 7pm, where the culinary team will present a carefully curated series of dishes. Each plate pays homage to familiar Indonesian flavours, reshaped with contemporary techniques to surprise and delight. The experience is heightened by the thoughtful pairing of local teas, chosen for their ability to mirror the landscapes, aromas and stories of the regions they represent. Each sip becomes an extension of the dish, tying the flavours together unexpectedly.
“Through RAASA, we wanted to deepen the connection between our guests and the culinary arts,” shares Lintangsari Handayani, General Manager of DoubleTree by Hilton Jakarta Bintaro Jaya. “By placing the table directly in the kitchen, every moment is charged with discovery. It’s not just about the food, but also about cultural pride and shared experience.”
Priced at IDR750,000++ per person, RAASA is staged once a month, with only six seats available per session.
