E: What are your responsibilities?
A: My responsibilities include leading and developing food and beverage and culinary goals, ensuring these are effectively maintained across all operations. I also oversee budgeting, manage daily F&B activities and ensure that guest service consistently meets high standards. Additionally, I closely monitor market dynamics to identify opportunities and drive strong business results.
E: What makes a typical day?
A: My day starts with coffee and a review of performance reports before joining the morning briefing with outlet managers. I walk through each venue, check operations and meet with the chef to review menus. Midday is filled with supplier calls, marketing discussions and budget reviews, while the afternoons focus on staff training and event setups. I spend evenings moving between outlets, greeting guests, overseeing service and ensuring everything runs smoothly, followed by a recap with the team.
E: Who has been the most influential figure in your career?
A: All the general managers I have worked with have influenced me in different ways. From them, I learned the importance of being a strategic thinker, a strong team player with an owner’s mindset and the necessity of maintaining close attention to detail. Each has shaped my approach to leadership and continues to influence my career growth.
E: What are your strongest attributes?
A: My strongest attributes are leadership and team development. I take pride in guiding and motivating diverse teams to reach their full potential while also focusing on developing F&B outlets and venues that create a lasting legacy.
E: What is one special thing about the property’s culinary offerings?
A: What makes our culinary offerings special is the blend of authentic local flavours with modern international techniques. By using premium, locally sourced ingredients, every dish reflects the spirit of the destination and tells its story, allowing guests to experience the culture through each bite.
E: How do you unwind?
A: I love exploring food and beverages in all their forms. Travelling allows me to seek out trending restaurants, go bar hopping and discover legendary local flavours. For me, unwinding often means turning curiosity into delicious experiences.
E: Dead or alive, who would you like to take out to dinner?
A: I would choose my mother. She was the one who first introduced me to the joy of food and the meaning of sharing meals with loved ones.
