Roso Restaurant Launches an Indonesian Culinary Dining Experience Through Rasa Nusa

Roso Restaurant at Bali Beach Hotel, The Heritage Collection, just unveiled a sensorial voyage through Indonesia’s culinary with its new curated dining experience, Rasa Nusa.

On the evening of Friday, 23 May, Roso Restaurant at Bali Beach Hotel, The Heritage Collection, officially launched Rasa Nusa, a curated dining experience that pays homage to Indonesia’s rich culinary heritage. The launch event featured an exclusive Wayang Kulit (shadow puppet) performance, seamlessly prepared and synchronised with the flow of each course, offering guests an immersive celebration of cultural storytelling and a sensory journey across the Indonesian archipelago.

Indonesia, the world’s largest archipelago with over 17,000 islands, is home to an extraordinarily rich and diverse culinary heritage. Each region presents its own unique blend of flavours and cooking techniques, combining fresh herbs, earthy spices, and a balanced heat. At the iconic Bali Beach Hotel, The Heritage Collection, Roso Restaurant captures this diversity through Rasa Nusa, a dining experience of 22 thoughtfully curated dishes that span the country, from Sumatra to Papua, all crafted with the finest local ingredients and heartfelt passion.

The evening began with Serombotan from Klungkung, Bali, a vibrant, plant-based salad dressed in rich peanut sauce, before progressing to more indulgent dishes such as Sate Kambing, lamb skewers grilled over charcoal and glazed with Madura’s signature peanut sauce; Gulai Kambing, a tender, slow-braised lamb shoulder curry in the Minangkabau style; and Woku Ikan Nila, tilapia prepared with Manado’s aromatic blend of lemongrass, turmeric and basil. To conclude the culinary journey, a touch of sweetness arrived in the form of Pisang Rai, banana with palm sugar crèmeux and coconut, elegantly presented on a plate.

The specially created Wayang Kulit performance added a poetic dimension to the evening, guiding guests through a fictional journey across Indonesian islands, with each act aligning the sequence of dishes served, making the debut of Rasa Nusa more cultural and memorable.

Going forward, Rasa Nusa will be available every Friday, offering an unlimited refined Indonesian cuisine in an elegant setting, where each dish is a story waiting to be discovered.
