As an independent concept under Regent Bali Canggu, Sazón has already gained a strong following among food lovers, offering a thoughtfully curated menu that combines premium Spanish ingredients with the freshest local produce for an authentic dining experience.

The space itself is designed to enhance the entire dining experience for up to 133 guests, featuring an interactive open kitchen, cozy booths, a lush alfresco garden seating and a striking bar at the front. Behind Sazón’s culinary vision is Michelin-starred chef Andrew Walsh, who is known for his ability to create dining experiences that are both exciting and delicious. His previous venture, Cure in Singapore, earned a Michelin Star in 2021 and a place on The World’s 50 Best Discovery List. Now, with Sazón, he brings his signature flair to Bali, ready to impress food aficianados in Bali who crave authentic and flavourful Spanish cuisine.

Working alongside him is Head Chef Javier Vicente, a passionate advocate for Spanish gastronomy whose impressive background includes competing in the World Championship of Paella Valenciana and co-owning the London Paella School. With expertise honed in Spain and Singapore, Chef Javier ensures that every dish at Sazón stays true to its roots in Spain.

The menu itself is the finest and bold celebration of Spanish flavours, featuring an enticing selection of tapas, paellas and expertly grilled meats. One of the standout dishes is the Spanish Tortilla, served with potato and onion jam and chorizo tomato, offering a rich and comforting taste of Spain. The Scallop Ajoblanco is a delicate combination of chilled almond soup, cucumber and dill, provides a refreshing contrast to the heartier dishes.

Paella lovers will appreciate the Paella Iberico Pork & Mushrooms Sofrito, which comes with aioli and kale, perfectly capturing the essence of Spanish communal dining. For those who enjoy grilled meats, the 28-Day Dry-Aged Beef ‘Txuleta’ (1kg) with confit garlic is a must-try, offering a deeply flavourful and satisfying experience.
