Senandung Selera Brings the Flavours of Malaysia to Jakarta

From 19 to 25 May, Pullman Jakarta Indonesia joined hands with Pullman Kuala Lumpur City Centre to present Senandung Selera – Taste of Malaysia. Packed with rich spices, bold flavours, and traditional dishes, this week-long culinary event brought the vibrant taste of Malaysia straight to the heart of Jakarta.

Pullman Jakarta Indonesia treated guests to a culinary experience bursting with flavour, heritage, and spice. Held from 19 to 25 May at Sana Sini Restaurant, Senandung Selera – Taste of Malaysia brought the rich traditions of Malaysian cuisine to life in collaboration with Pullman Kuala Lumpur City Centre.

We caught up with Chef Haslan, one of the brilliant minds behind the week-long buffet, who shared what makes Malaysian food so unforgettable. “Malaysian and Indonesian dishes are quite similar,” he explained, “but Malaysian food isn’t as spicy. What we’re doing here is presenting traditional Malay cuisine as it truly is, with all its slow-cooked detail.”

One of those intricate details is kerisik, a toasted coconut paste that takes up to three hours to prepare, forming the heart of many authentic dishes. “Malay food is complex,” he added. “Every region in Malaysia has its own signature, just like how Kelantan leans towards sweeter flavours, Johor is all about bold spices, and other states such as Penang or Negeri Sembilan bring their own unique twists. As a chef, you need to understand them all.”

A must-try on the menu was the Kambing Rempah, marinated overnight in a blend of seven spices including turmeric, coriander, and masala. Another dish that sparked curiosity was Ikan Patin Tempoyak, a delicacy from Pahang made with fermented durian aged for a month.

During his exclusive cooking class, Chef Haslan aimed to give more than just recipes. “I want people to feel the culture, the story behind the food. Especially through our signature lamb shank dish.”

Deeply rooted in tradition and layered with flavour, Malaysian cuisine left a lasting impression on every guest lucky enough to taste it.
