In early September, chefs Chris Salans, Mandif Warokka and Ben Ungermann gathered together at Padi Fine Dining to present a charity dinner themed Sharing is Caring in support of the victims of the Lombok earthquakes. Organised by Exquisite Media and supported by Equil natural mineral water, Riedel glassware, Beringer wines and Red and White, thirty guests joined the intimate pescatarian dinner which opened with cocktails and canapés on Padi’s outdoor deck under the night sky. The six-hands, five-course, wine-paired dinner saw Mandif present two dishes he created especially for Padi, Le Caviar de Légumes on a parsley emulsion with house-cultured cream and gold leaves paired with a sparkling Martini and a succulent Butter Poached Bay Rock Lobster with sea urchin emulsion paired with Beringer Founder’s Estate Pinot Noir. Chris brought his Organic Tomato Tartare with frozen tomato, lemongrass water and dabu-dabu vierge, a popular dish at Mozaic, as well as an exquisite Tasmanian Salmon Confit with basa gede oil, kaffir lime dressing, fennel and caviar paired beautifully with Beringer Main & Vine Pinot Grigio.
The dessert was handled by visiting chef Ben Ungermann of Australian MasterChef 2017 fame, who was visiting Bali. His Taste the Bali Forest was a creative rendition with lemongrass vanilla bean ice cream, black wild rice shortbread, caramelised banana mousse and klepon stone paired with Beringer Sparkling White Zinfandel. This gourmet evening to remember was appreciated by all the guests, some of whom had flown in from Jakarta to support the charity evening.
