Indonesia’s beloved spicy chilli paste, featured at the festival, is made from the recipes of nine royal palaces. From Sambal Taples, Sambal Matah Tuung, Sambal Terong Ungu Pedas Manis to Sambal Don Kecarum, every creation offers a taste of heritage, reflecting the island’s deep cultural and culinary roots.

Alexander Zulkarnain, Acting Chief Marketing Officer of Taman Safari Indonesia Group, explained that the festival reflects its ongoing commitment. “Through Bali Royal Chili 2025, we would like to provide a culinary experience that is unique and rich in cultural meaning,” he said.

In addition to the sambals, visitors can explore Bale Banjar, located in front of UMA Restaurant. Here, traditional weaving methods and motifs are highlighted in the Royal Fabric exhibition. There is also a Royal Music featuring Balinese instruments and the Royal Coffee tasting experience that allows guests to taste and even learn to make their own coffee.

“By involving various elements such as dance, music, traditional fabrics and Balinese coffee, we aim to create a festival that goes beyond the palate, offering education and appreciation of local wisdom. We hope this festival strengthens Bali’s image as both a cultural and world-class culinary destination,” Alexander added.

I Gusti Nyoman Darta from Puri Ubud also gave a demonstration of how to cook sambal to the guests during the event. The event was also attended by renowned culinary expert William Wongso, further emphasising the importance of preserving Indonesia’s culinary heritage.
