The Ritz-Carlton Jakarta, Mega Kuningan recently hosted an exceptional dining experience as Lobo Restaurant & Bar welcomed 80/20, a Michelin-starred restaurant from Bangkok, for an exclusive two-night takeover on 3-4 October 2025.
Led by Chef Thav Phouthavong, 80/20 is celebrated for its modern take on Thai cuisine, guided by the philosophy of utilising 80 percent locally sourced Thai ingredients and 20 percent creative innovation. This unique approach has earned the restaurant a Michelin star for six consecutive years from 2020 to 2025.
During the event, Chef Phouthavong presented a six-course tasting menu that showcased Thai culinary heritage elevated with contemporary techniques. Highlights included Son in Law Egg with tamarind and crispy shallots, Oyster Jeow Som with coriander foam, Lohn Scallop with coconut and caviar, Tom Klong seabass in smoked dashi, Phed Nam Prik Nam Liap with dry-aged duck and beef green curry with wagyu tenderloin. The experience culminated with Thai-ra Misu, a dessert combining oliang coffee, milk foam and coconut cake.
For vegetarian diners, Chef Phouthavong also prepared a dedicated six-course plant-based menu, featuring seasonal vegetables, herbs and artisanal ingredients, all crafted with the same precision and attention to detail.
What made this collaboration unique was not only the exquisite menu but also the setting itself. Lobo Restaurant & Bar is recognised as one of Jakarta’s premier fine dining venues, and the takeover showcased Lobo’s role as a platform for international culinary innovation, bridging Jakarta’s dining scene with global talent.
