COMO Uma Canggu’s latest Culinary Odyssey celebrates the soulful flavours of Buleleng with a refined menu that reimagines coastal traditions and northern Balinese heritage.
COMO Uma Canggu is excited to continue its vibrant exploration of Balinese cuisine with the Buleleng Edition of the COMO Culinary Odyssey. This unique dining experience brings the flavours of North Bali to the heart of Canggu. Set at the laidback yet refined COMO Beach Club, this new chapter invites guests on a sensory journey through the coastal villages and culinary traditions of Buleleng.
Executive Chef Kadek Sugiantara draws from his own roots to craft a multi-course menu inspired by the rituals and recipes of his childhood. Dishes include Lawar Kenus, featuring grilled squid and toasted coconut; Pepes Ikan, which showcases fragrant barracuda wrapped in banana leaves; and the bold Serapah Gurita, a smoky turmeric octopus curry. Each dish reflects a deep respect for local ingredients and time-honoured techniques, telling the story of a region shaped by the sea, ceremonies and history.
The experience is enhanced by three signature cocktails designed to capture the spirit of North Bali. Utilising Gwan Gwan Hoo, a revered arak traditionally reserved for family gatherings and village rituals, these drinks incorporate tamarind, torch ginger, coconut and palm sugar to create refreshing yet rooted flavours. The cocktails—Segara Mekalas, Taman Lovina and Darma Gula—offer a taste of heritage in every sip.
Available from 13 June to 31 July 2025 by pre-order, this special menu is priced at IDR475,000++ per person. More than just a celebration of cuisine, the Buleleng Edition reflects COMO’s commitment to cultural connection, sustainability and sharing Bali’s lesser-known stories at the table.
