W Bali – Seminyak Welcomes a New Director of Culinary

W Bali – Seminyak has just welcomed a new member to the family with the brand appointing Richard Bias as the hotel’s Director of Culinary. In this position, Richard oversees all W Bali – Seminyak’s food and beverage outlets, from the grill haven FIRE and pan-Asian favourite Starfish Bloo, to party destination Woobar, W Lounge and the 24/7 In Room Dining.

Richard was born in the UK, where his mother ran the kitchen at a country pub and his father the bar. His upbringing evoked his passion for cooking that eventually saw him take up his first culinary job at London’s Simpon’s in the Strand. His love for the job has taken him on numerous culinary adventures in the country and around the world, including impressive stints at the one-star Michelin restaurant City Rhodes and Mosimann’s private club in Belgravia.

Furthermore, Richard has tackled culinary challenges as the executive chef for Victoria Sapa Hotel and Spa in Vietnam and executive chef for The Chedi Muscat in Oman, among others. He also oversaw daily operations at Atlantis, The Palm, including signature restaurants like Nobu and Bread Street Kitchen.

Richard has brought his creativity and honed skills to W Bali – Seminyak’s FIRE, resulting in a series of new and unrivalled dishes launched this March. Diners can look forward to delicacies like duck cracker with foie gras, crispy confit and pancetta, wagyu beef marmalade on toast with house pickles, crab claw and jicama with nitro pomelo and puffed rice, batik lobster wonton with oxtail, mushroom and red wine shallots and lightly cured hamachi with wild fennel panna cotta, tangerine and yuzu.

The caramelised pork belly with sunflower seed risotto crème fraiche and charred onions is a scene stealer, while the main show is the slow roasted top sirloin and braised short rib with pumpkin smoothie, roasted roots and crispy mushrooms. To conclude the dining experience on a sweet note, Richard has prepared the unique goats cheese churros with truffle honey and Valrhona Bali cocoa with blood orange and hazelnut.
