The Westin Jakarta has introduced a new force to its culinary team, appointing Loh Yun Fatt as chef de cuisine for its Chinese speciality offerings. Known simply as Chef Loh, he now leads the Chinese kitchen operations across the hotel’s dining venues, including Seasonal Tastes and banquet service.
Chef Loh’s arrival marks another chapter in his long-standing connection with Marriott International. He previously honed his skills as a demi chef at W Kuala Lumpur before stepping into the role of Junior Sous Chef at Sichuan Kitchen, Four Points by Sheraton KLCC. Over more than a decade in the industry, he has gained expertise in food safety, team leadership and menu development, with Chinese cuisine as his true area of mastery.
His story begins far from the bustle of Jakarta’s skyline. Growing up, Loh was inspired by his father’s love of cooking for the family: meals prepared with patience, precision and genuine care. At just seven years old, a primary school headmaster encouraged students to choose a career path based on passion. That advice stayed with him, shaping his ambition to become a chef. Later, in culinary college, meeting his first Chinese head chef cemented his dedication to Chinese gastronomy, particularly the balance of flavour and technique it demands.
For Loh, Chinese food is more than a profession. It is a language of heritage and connection. He speaks of flavours that evoke memories, methods that require discipline, and the quiet artistry of transforming simple ingredients into dishes that resonate beyond the palate.
