The Westin Resort Nusa Dua, Bali Unveils Travelogues of the Archipelago Chapter Four

Travelogues of the Archipelago, the collaborative dining series by Ikan Restaurant at The Westin Resort Nusa Dua, Bali, returns with its fourth chapter. The restaurant’s resident Chef de Cuisine, Raviel Sidik, will be assisted by the owner of Dailah Sajian Kontemporer, Lucky Lukman, for a robust menu traversing the flavours of East Nusa Tenggara from 25 – 27 October 2025.

Continuing the arc of traditional cuisines reinterpreted through a contemporary lens, this edition boasts a menu with ingredients and flavours native to East Nusa Tenggara as its building blocks. Nuabosi cassava takes centre stage for the hearty Ikan Asap Ubi Nuabosi, where the root vegetable is deep fried to golden brown perfection and stuffed with a blend of smoked skipjack, beef floss and a buttermilk kemangi emulsion. The robust local spices are highlighted through multiple dishes, such as the Laksa Kari Asap, and in sambal form for Ikan Lawar Kupang.

Ikan RestaurantQuintessential foods native to Sumba also make an appearance. The region’s take on fried rice, Nasi Goreng Ka’pu Pantunnu, invites diners to an explosion of smokiness and fragrant aromatics, while Nga’a Watary Patau Kabbe gives a peek at one of the island’s humbler cooking.

True to East Nusa Tenggara’s coastal nature, an array of seafood selections awaits, from grilled and cured fish to smoked octopus and king prawns, but those who prefer heartier meats can delight in chicken, beef and even wild boar options. Vegetarians can also indulge in other offerings, such as the breadfruit-based Sukun Cetemak Jagung or the Plant-Based Karmanci. Sweet tooths can end the meal with a choice of two desserts, the glossy Tart Susu Kupang or a refreshing granita made from kawista and pineapples.

Ikan RestaurantWhat makes this culinary experience even more special is the community empowerment underscoring this chapter of Travelogues of the Archipelago. Working with English Goes to Kampung and food vlogger Magdalena, a portion of the proceeds from this event will support the Sumba Culinary Program, which brings a piece of gastronomic education to small villages in Sumba.
