When Les Amis opened its doors in 1994, the culinary landscape of Singapore looked remarkably different. Independent fine dining was a rarity, a gap that this ambitious establishment sought to bridge. Its name translates simply as ‘friends’, a nod to the partners who founded it, yet the restaurant has evolved into something far more significant than a mere gathering place. It stands today as a mature, authoritative figure in Asian gastronomy.
Chef Sebastien Lepinoy guides the kitchen. His approach is disciplined and technically exacting, a skill set honed during a formidable 17-year tenure with the late Joël Robuchon. Lepinoy brings a certain rigour to the pass, ensuring that every plate reflects the high standards of French haute cuisine while adapting to a modern palate.
The menu reflects this precision. Signature plates have become essential orders for regulars, particularly the chilled angel hair pasta, balanced with caviar and black truffle. Another highlight is the sea urchin soufflé, lifted by tarragon and dill within a deep, intense crustacean sauce. For dessert, the kitchen serves a classic baba au rum accompanied by lightly whipped crème fleurette, proving that traditional technique often yields the most satisfying results.
Beyond the food, the experience is defined by a level of service that recalls a grander era of hospitality. Recognised with the Art of Hospitality Award in 2020, the floor team operates with white-gloved finesse. Specialists in cheese, truffles, and caviar move with quiet confidence, offering expertise that enhances the meal rather than overshadowing it. Les Amis continues to demonstrate that true quality does not need to shout to be heard.
