El Kabron, the effervescent cliff club with its perfect view of Uluwatu’s stunning sunsets, has been maturing before our very eyes. As the lounging areas of the day club have slowly and elegantly spread to satisfy the growing demand, the dining and wining has become ever-more sophisticated. Where once Spanish tapas was the focus, now a more Mediterranean vibe is being welcomed with an expanded menu that provides new offerings showcasing popular dishes that suit Bali’s climate, El Kabron’s ambience and satisfy the palate.
Heading this rejuvenated culinary direction is recently appointed Chef Manuel Polin. An Italian native, he thrives on the stimulus of locally sourcing indigenous and fresh produce to create dishes that emphasise flavour, but also support the local economy and conserve nature. A proponent of high-quality ingredients and attention to detail, diners will see new additions focusing on locally sourced fresh seafood. Do look out for the braised pork shoulder and carrot anise purée.
The menu concepts will be distinct across the different areas; grazing and light bites at the poolside, creative salads and light meals at lunchtime in the dining room, more elegant offerings at dinner, plus great desserts with choices like Bali-harvested raspberry tart and signature textured cheesecake. Popular dishes will be rejuvenated, including the barramundi with pork guanciale and coconut martini sauce.
Chef Manuel has many years of international culinary experience in five-star hotels in Europe, the Middle East and Asia, handling Italian and Mediterranean fine-dining restaurants, as well as winning the Best Buffet 2017 for Oscar’s at Conrad Centennial Singapore. He participated in the Italian Cuisine World Summit 2016 and has catered official state dinners and events for the Prime Minister’s office in Singapore.
