The meticulous attention to detail starts with sourcing the ingredients, all of which are imported for a refined dining experience. The broth is a mild mixture of Japanese spices and a warming pepper that is carefully prepared over several hours as the perfect accompaniment. The finely sliced beef is some of the best to be found – Japanese Satsuma Gyu A4 and A5, and Australian wagyu MB9 – even the vegetables are imported.
Gently swished in simmering broth, the melt in the mouth beef takes mere seconds to cook and is even better dipped in the Yugen special, konbu, sukiyaki and the chicken collagen favourite. For those who prefer something a little richer,
Yugen also serves sukiyaki with the same incredible wagyu beef. Cooked in a soy sauce-based broth in a hot pot, it’s just as refined as the shabu shabu and is divinely dipped in a little beaten egg just before you eat it.
The menu includes chawanmushi, light salads, rice and noodles, as well as typically Japanese desserts, including the chef’s own delicate warabi mochi for the perfect ending to a nourishing meal that warms the heart and soul.
