The Double-Six Rooftop is a sprawling space boasting a magnificent 270 degree panoramic ocean view. With space for around 1,200 people, the glitzy bar, lounge and grill is unsurprisingly popular at sunset and the comfortable “floating” lounge pods are always the first to go.

There really is a lot to rave about at Rooftop. The location, view, comfort, the massive shark tank, funky grooves, international guest DJs and the excellent service provided by the sparkling staff combine to create an impressive relaxed, yet upbeat ambience. For me, the icing on the cake is the surprisingly substantial menus – both drinks and food – that are all about quality and integrity.

The bar and grill are fully in tune with the sensory concept Robert Marchetti has developed throughout the hotel’s F&B outlets. The open kitchen and bar create not just an impressive visual impact; the aromas that waft around the casual, comfortable seating areas are extremely enticing. It is a cool place to relax, eat and drink, and is located adjacent to one of the island’s prime beachfronts.

Bali’s Best Kept Secret? – Presenting the Sling Bar

Located on the fourth floor of the plush Double-Six Luxury Hotel in Seminyak, Bali, and nestled above Robert Marchetti The Plantation Grill, the Sling Bar is a chic, yet racy martini bar, that offers a notable collection of champagnes, prohibition-inspired martini concoctions and dark spirits, all served against a groove-filled fusion of mysterious elegance and nocturnal fun.

The pure opulence of the venue is the first thing that strikes guests lucky enough to be “in the know”. If you enter from the Double-Six Rooftop, glance down into the classic sophistication of the black and white Billiard Room, which as well as a delicious bar menu serves a fabulous range of plantation-inspired rum cocktails.

Once you arrive at the Sling Bar, the first thing that draws your eye is the stack of bespoke labelled Dom Pérignon bottles on the bar. To the right, housed in a huge bookcase-style cabinet, is a fantastic collection of fine dark spirits guaranteed to raise a smile. The observant will notice a hidden door leading to the discreet Boudoir – a private room that is classically comfortable and superbly presented and is the perfect luxury space for a small group to relax in total privacy.

Heavy on subdued lighting, original art, mirrors and dark woods, the bar has a sensual mood that continues throughout the public spaces and into the gloriously Bohemian powder room – for ladies only!

Throughout the hotel bars and restaurants, Jonathan has created individual menus offering a stylish range of drinks from fruity detox concoctions to the most indulgent of chocolate-laden delights. But it’s here at the Sling Bar where one can truly feel his passion; the result is an extraordinary powerful menu inspired by some of the all time great cocktails.

For purists, try The Guitarist served in a frozen classic martini glass garnished with olive and cucumber. This delicious cocktail sees Hendricks gin-muddled cucumber, coriander, Dolin Rouge vermouth, brought together to create a startlingly fresh cold martini. The Guitarist is spectacular and packs quite a punch and, like all the cocktails, only uses premium spirits straight from the freezer.

The early evening atmosphere is pretty relaxed, but by 10PM, the music has cranked up a notch with some late night funky vibes, with Stevie Wonder, James Brown, KC & The Sunshine Band and similar happy sounds whipping up a party vibe. The Sling Bar is possibly Bali’s best kept secret – but that’s the way (aha aha) they like it…

Espresso Expressions

Espresso Expressions!!! With currently nine on the menu, taking the espresso-based cocktail route has never looked more enticing.  My favourite, the Double Shake is quite frankly a must!! With spiced Sailor Jerry, Malibu, Patron cacao, espresso coffee topped with Malibu cream and grated chocolate, you might never want a standard espresso again.

Set more or less in the centre of the venue and surrounded by open, flaming satay grills, the raised cooking station churns out a range of quality meat, seafood, vegetarian dishes and desserts. My choice was The United Flavours of Satay, grilled over wood and coconut shells. This massive range of signature satays offers something for everyone. The Italian skewered lamb served on a bed of rosemary with spearmint and lemon sauce is particularly tempting, but the Rockefeller, a mix of slipper lobster and scallops topped with caviar and a fluffy lemon sauce has to be the one! Pair it with a delicious Bawah Tanah daiquiri or Gojitaba iced tea, relax and soak up the atmosphere.
