The Westin Resort Nusa Dua, Bali proudly presents an unparalleled culinary experience: the Hamabe x SIKI Collaboration Dinner. Taking place on Friday, 7 February 2025, and Saturday, 8 February 2025, this exclusive event promises two unforgettable nights of gastronomic delight at the exquisite Hamabe restaurant.

At the heart of this collaboration are two culinary visionaries, Chef Vincent Hiew, the mastermind behind SIKI Japanese Restaurant, and Chef Edwin S. Ana, the innovative force at Hamabe. Together, they have created an exclusive eight-course menu that celebrates the harmony of Japanese culinary excellence infused with Balinese inspiration. 

The menu expresses their creativity, featuring signature dishes that showcase Hamabe’s dedication to fresh, seasonal ingredients and innovative techniques. Creations from SIKI blend Japanese culinary mastery with global and Balinese flavours. One particular dish, inspired by waves, symbolises the storytelling and collaboration between the two chefs, reflecting the convergence of their ideas and cultures. To complete the evening, a special dessert exclusively crafted by the resort adds a perfect sweet finale.

This collaboration is not just a one-time event but part of a reciprocal culinary exchange. In May 2025, Chef Ana will bring the Hamabe dining experience to SIKI Japanese Restaurant during a special dinner series on 2 and 3 May. This continuation ensures that the spirit of collaboration and shared inspiration reaches a broader audience.

Chef Edwin S. Ana, born in the Philippines and raised in South Africa, brings a global perspective to Japanese cuisine. His tenure at Hamabe has seen the menu evolve into a vibrant fusion of tradition and modernity. Known for his bold use of fresh ingredients, he seamlessly combines classic techniques with innovative flavours. Meanwhile, Chef Vincent Hiew, whose illustrious career includes stints at Nobu in Australia and London as well as Crystal Cruises, is celebrated for his ability to blend traditional Japanese techniques with global influences. At SIKI, he honours both Japanese and Balinese cultures through his creations, guided by his passion for creativity and the joy of cooking.
