One of Bali’s noted chefs, Maurizio Bombini, took his namesake restaurant, MAURI, to discerning diners in the capital city at Raffles Jakarta’s The Dining Room.
Opening in Bali in 2019, MAURI quickly became a renowned dining institution thanks to its chef-owner Maurizio Bombini, who had honed his skills working in many five-star hotels around the world, including Bali.
A contemporary Italian restaurant with a touch of tradition, MAURI offers an intimate dining experience inspired by the iconic Italian coast of Puglia where ingredients are handled with care to showcase their purest flavours, with many picked from its own hydroponic garden.
Raffles Jakarta invited chef Maurizio to take up a residency at The Dining Room from 16 to 22 November 2020, where he tantalised the taste buds of diners in the city with MAURI’s latest Discover Winter Menu. The tasting menu took guests on a culinary journey to southern Italy with signature dishes Otoro tuna, classic burrata ravioli with lobster consommé and lemon, Atlantic black cod served with a traditional pizzaiola sauce and MAURI’s modern dessert with a twist, Cocco Miele.
The Dining Room was launched by Raffles Jakarta in September 2019 and is an innovative concept that highlights a fully integrated show kitchen and a sophisticated main dining area with a view. The debut saw a line-up of guest chefs from Michelin-starred restaurants and now includes up-and-coming dining establishments that play a role in the culinary world right now.
