The experience opens Sundays at 11AM in the Champagne Bar with free flow Champagne, cocktails, juices and canapés. At noon sharp, to the spectacle of Chief Sommelier Harald Wiesmann’s impressive wielding of the sabre for the sabrage, guests move into the intimate dining room. The white and golden-wood hues perfectly offset the dazzling views across the azure Indian Ocean, while the rich white linens and sparkling glassware set the scene for an opulent, leisurely meal in convivial company.
As the chefs toil over their masterpieces in the open kitchen, the scent of lavish ingredients tickles the senses and soon plates of delicate temptations appear at the table, a palette that tempts the eye as much as it tantalises the taste buds.
Opening with amuse bouche ranging from Sturia vintage caviar served on Vichyssoise ice cream with potato crumble, citrus sour cream espuma and basil oil in a stunningly artistic semi-matte glass bowl, to delights such as a trio of oysters served in various styles or prime, black forest and parma ham and pork terrine, and the simplicity of pastries and smoothie bowls, diners can be sure of an exquisite meal.
Among the many pass-around highlights are the Rougié foie gras, slow-braised Wagyu short ribs and a seasonal selection of artisan cheeses artistically presented with fig chutney and walnut bread.
From the beetroot composition, to Caesar salad, Peking duck, roast beef, herb bread-crusted Australian lamb chop and the interesting yellow fin tuna tataki with oxtail dumplings and five spice soy reduction, the chefs take their guests on a rich and exotic culinary journey.
This refined extravaganza rounds off with the divine Astor diamond chocolate soufflé, a selection of sweets created by the French chef pâtissier and homemade pralines and macarons. Those partaking of the beverage package’s free flow Champagne, premium wines and cocktails may also enjoy digestives and cigars from 2PM to 3PM on the terrace.
