MOGĀ at Pullman Singapore Hill Street is embarking on an exciting new journey with the launch of Breaking the Norm, a menu that reimagines the izakaya experience. This innovative concept is the result of a dynamic collaboration between Bar Manager Gavin Teverasan and Head Chef Leon Quek. The modern, Japanese izakaya-inspired cocktail bar has long been known for its relaxed sophistication, and this latest evolution is set to enhance that reputation with a vibrant blend of tradition and creativity.

The new menu celebrates those who defy conventions, inspired by the modern girls, or mogā, of Japan’s Taisho era, who challenged expectations and transformed popular culture. This spirit infuses the entire menu, from cocktails to cuisine. The cocktail collection is divided into two sections: Izakaya, featuring unpretentious, easy-drinking signatures, and Modern, which offers bold reinterpretations of familiar classics with a Japanese twist.

Among the standout cocktails is The Frozen Drink, a playful take on the traditional milkshake. This creation combines ice-blended whisky, taro liqueur, cream, matcha and sweet red azuki beans, transforming a nostalgic summer dessert into an indulgent cocktail. For a bracing and savoury option, the Dirty Saketini mixes sake and shochu with house-made pickling brine, providing a sophisticated and satisfyingly salty twist on the classic Martini.

Chef Leon’s food menu complements the cocktails perfectly, elevating the casual izakaya format with a contemporary global sensibility. Dishes like Spicy XL Clams evoke the warmth of home-style cooking while maintaining an elegant flair. The Crispy Squid, enhanced with sansho fish sauce, kizami yuzu and green chilli, is designed to tantalise the palate and keep guests reaching for another sip.
