Inspired by the traditional English carrot cake, the natural sugars within the carrots create a sweet, yet healthy alternative for wellness enthusiasts in search of a little guilt-free indulgence. In iconic St. Regis style, a generous dollop of lime mousse enhanced with a hint of lemongrass is topped with a ricotta ice cream quenelle to create a savoury, multi-sensory experience for the palate. A dash of vanilla within the carrot espuma along with a sprinkling of cinnamon amongst dehydrated layers of carrot and a carrot consommé coulis enhanced with local spices work their magic to highlight the exotic flavours found on the Island of the Gods. “The original idea of this dessert was to have a vegetable dessert a la carte and we naturally thought about the carrot as it contains natural sugar. The base of the dessert is inspired by the classic English carrot cake. To enhance the taste of the carrot, we have added a lime mousse with lemongrass topped by ricotta ice cream quenelle. These elements are covered by a carrot espuma flavoured with vanilla. For the plating we tightly set up dehydrated thin layers of carrots with cinnamon. The coulis is a transparent consommé of carrot with local spices.”
