E: Describe your typical day in a sentence.

David: I’m the fireman on daily duty, cooling down the systems – and sometimes the people too!

E: So how did you come to be Director & Project manager at El Kabron?

D: It’s something that just happened day by day, year by year. El Kabron started six years ago as a family and at that time every one of the partners did everything that needed to be done. As the years have gone by, we have grown and now everyone focuses on what they do best.

E: What’s the toughest part of your job?

D: Analyzing every situation and trying to take the right decisions, taking into account where we are and how the island works.

E: And what makes you smile at work?

D: The satisfaction of seeing people appreciate how special our place is.

E: What motivates you?   

D: Worldwide recognition.

E: Would things fall apart if you weren’t around?

D: No, someone else would be doing my job – differently, but not better or worse.

E: Who in your team deserves more recognition and why?

D: Everyone who has stood with us from the beginning. That’s the staff, the management, the partners, the local community. Every single one of them has helped us to become what we are now and continues to help us with where we are going…. Let’s keep it rolling!

E: Why should people choose El Kabron to dine? 

D: Because we offer a unique rustic Spanish dining experience with amazing dinner entertainment combined with a new menu created specially by chef Marc Torices that is sure to please everyone.

E: Away from work, what’s your favourite place to eat?

D: Home with my family! I enjoy eating out too, but Bali has plenty to offer these days and it would be unfair if I just mentioned one.

E: How do you unwind?

D: Drink wine, champagne and BBQ with friends by a pool!

E: Finally, any advice for those looking to break into the industry?

D: Nowadays, Bali is becoming much more professional. The only people who will succeed are those who create their own signature brand and philosophy and have the guts to stick to it for the long term. Short-term businesses don’t work in Bali now; but that’s my humble opinion. Good luck to everyone who is willing to try it!
