The Opus One Wine Dinner is an exclusive one-evening experience to be presented on 2 November 2023 and is a meticulous creation that offers guests a blend of modern dishes and timeless elegance. Export Manager for Opus One Winery for Southeast Asia, Hong Kong, Macau and Taiwan, Yvonne Chiong Mougin, stands as a wine industry expert and is looking forward to hosting the occasion.
Chefs Oscar Perez and Rizky Apriliana lead the way throughout the evening, promising a splendid display of product-driven dishes that honour the seasonality of ingredients. Premium selections of wine from the world’s best vineyards and guilt-free desserts from Pastry Chef Kevin Lee compliment the culinary journey to leave guests with a final touch that will not be forgotten.
A welcoming glass of champagne will commence the evening before a curated five-course dinner begins with the delicate taste of Smoked Oscietra “Sturia” Caviar paired with egg mousse, cucumber gel and chives. Following the delicious starters, succulent Hokkaido scallops and duck foie gras, accentuated with brown onion and leek cream and rosemary oil pair perfectly with 2018 Roserock Chardonnay.
The main highlights are still yet to come soon after, with the rich flavours of Yamagata A5 Sirloin, combined with glazed Japanese grapes, red onion potato Pont Neuf, and a tarragon reduction, paired with both the 2017 and 2018 Opus One crowding the table. Finally, a Peach Composition dessert, blending peach & lime with peach sponge cake, and a refreshing peach-coconut sorbet with fresh mint, harmonised with Overture by Opus One completes the experience as an exquisite dessert.
