Scheduled to open in March 2018, DUMBO bali is already the talk of the island. Located in Bali’s greener area of Ubud, DUMBO Bali is the brainchild of Jonathan Russell of The Elephant and Green Ginger Noodle House fame. With the aim of offering something new and refreshing to the neighbourhood, DUMBO bali comprises wood-fired modern Italian food, a coffee salon and Uncle Tony’s home-made limoncello.
The ground floor sees the beautiful terrazzo bar as the pièce de résistance of the cosy coffee salon – dubbed an “Italian jewel box”, where the perfectly balanced espresso is the super star on offer. The restaurant is upstairs, where a big pizza oven front and centre and the open kitchen play a preview of the Italian goodness you’re about to experience.
DUMBO bali is designed in such a way that it resonates a comfortable and intimate ambience. The interiors are a collaborative effort with Gaya Ceramics and ALLCAPS street artists, making the place quintessential Ubud, but also urban at the same time. Topping off the warm and inviting vibe is the curated music from Jonathan’s personal vinyl collection.
The delightful dishes served at DUMBO bali include the home-made giardiniera, or Italian pickled vegetables freshly handpicked from the DUMBO kitchen garden, fennel polpette with pomodoro sauce and spinach gnocchi, parmesan crumbed mushrooms with lemon and aioli, roasted broccolini and Brussels sprouts, panzanella with fennel and orange and the signature black rice brûlée. No visit to DUMBO bali will be complete without trying the pizzas baked in a coffee wood-fueled oven. Vegetarians will be happy to know that DUMBO bali’s menu is vegan-friendly.
All the dishes at DUMBO bali are made using sustainable and clean ingredients from the local farmers in Bali’s highlands, so you know you’ll get quality food here. Last but not least, don’t go home without trying the classic Italian-inspired cocktails and, of course, the signature Uncle Tony’s limoncello!
