Alila Villas Uluwatu unveils the Queens of the Kitchen series with Chef Han Na Rae.

On 23 and 24 August 2024, Alila Villas Uluwatu will host the debut of its much-anticipated Queens of the Kitchen culinary diva series, a milestone event in Bali’s gastronomic scene. This exclusive dining experience will bring together the resort’s Executive Chef Derrick Walles and the renowned Korean culinary artist Chef Han Na Rae of BanJoo 반주 in Jakarta. For two nights only, these two chefs will join forces to present an exquisite degustation menu, offering guests an evening of sophisticated flavours and innovative dishes.

TUNA AND HAMACHI CRUDO

Chef Han Na Rae’s culinary journey began in Seoul, where she was born, and later flourished in Vienna, Austria, where she was raised. Her cooking style is a rich blend of her deep appreciation for Korean heritage, passed down from her mother’s traditional cuisine, and the global influences she has absorbed throughout her career. With an inventive approach to food, Chef Na Rae has opened three successful restaurants in Seoul. She now leads BanJoo 반주 in Jakarta, where she masterfully blends traditional Korean recipes with contemporary techniques. Through her private dining venture, NARAE KITCHEN, she curates bespoke menus that delight guests with meticulously crafted dishes.

At Alila Villas Uluwatu, Chef Na Rae’s innovative fusion of Korean tradition and global culinary artistry will be showcased alongside Chef Derrick Walles’ own culinary flair. Inspired by the opulent dinners Chef Na Rae often prepares for Korea’s chaebol families, this collaboration will highlight premium, sustainably sourced ingredients, resulting in an indulgent and environmentally conscious menu.

MASCARPONE SCALLOP AND LOBSTER RAVIOLI

Guests at this exclusive event will embark on an unforgettable culinary journey, starting with canapés that capture the essence of Korean flavours, such as Kimchi Squid Jeon and traditional Korean savoury pancakes. The degustation menu will then unfold, with dishes like Korean raw fish ceviche and tuna and hamachi crudo, followed by the rich and decadent mascarpone scallop and lobster ravioli, and culminating in the tender wagyu tenderloin and abalone steak.

The evening will conclude with a dessert course that beautifully marries the culinary traditions of Korea with the tropical bounty of Bali. Traditional chapssal sticky rice cake, paired with berries sourced from Bali’s central highlands of Bedugul, will provide a sweet and satisfying finale to this extraordinary dining experience.
