After a successful run from 2015 to 2021, Spice—Ubud’s cherished destination for approachable Indonesian cuisine—has returned with a bold, reimagined identity: Spice by Blake. Under the visionary guidance of Chef Blake Thornley, co-owner of Bali’s renowned Mozaic, this new chapter brings a vibrant, casual, yet artfully crafted experience to the heart of Ubud.

Spice by Blake remains committed to honouring the richness of Indonesian flavours but does so with renewed vigour. The menu pays tribute to the archipelago’s culinary heritage while introducing modern, globally influenced interpretations of traditional dishes. Each plate is bursting with bold flavour, seasonal produce, and sustainable ingredients sourced from local farmers and fishers—an ethos deeply integrated into every aspect of the dining experience.

Adding to the excitement is the bar programme, curated by award-winning mixologist Bili Wirawan, named Best Restaurant Mixologist 2024 by Les Grandes Tables du Monde. His imaginative cocktails, infused with local spices and tropical ingredients, bring a playful edge to the vibrant atmosphere.

Open from 4pm to 1am, with the kitchen serving from 5pm to 11pm, Spice by Blake is ideal for a breezy aperitif, a flavourful dinner or a lively late-night bite. More than just a restaurant, it’s a culinary platform for innovation, creativity and cultural celebration.
