An evening of Michelin-starred cuisine and soulful jazz unfolded by the shores of Sanur, as The Meru Sanur and Bali Beach Hotel The Heritage Collection celebrated artistry, flavour, and music by the ocean.
The Meru Sanur and Bali Beach Hotel The Heritage Collection recently hosted Gastronomic Artistry at Seaside Jazz Mantra, an evening that combined fine dining and soulful jazz by the serene Sanur shoreline.
The exclusive event featured two celebrated chefs, Pierluigi Gallo, Michelin-starred chef from Achilli al Parlamento in Rome, and Marco Medaglia, Executive Chef of The Meru Sanur and Bali Beach Hotel. Together, they created a six-course wine-pairing dinner, accompanied by a captivating performance from the Koko Harsoe Quartet, curated by the Ubud Village Jazz Festival.
Guests began their evening with Herb and Cheese Ciabatta and Rosa, a delicate bite of green apple, beetroot, and rose perfume. Highlights of the menu included Chef Pierluigi’s Roasted Bell Pepper with Wild Arugula and Candied Lemon, and Chef Marco’s Lobster and Caviar with Lemon Balm Emulsion, paired with sparkling rosé from Veneto. A light and zesty Frozen Limoncello with Lime and Mint Caviar refreshed the palate before the main courses, Salted Atlantic Chilean Seabass and Crispy Beef Tongue with Mandarin and Broccoletti Greens, each complemented by premium wines from Cloudy Bay, Marlborough.
The night concluded with a decadent Frangelico Affogato, blending hazelnut mousse, espresso crémeux, and vanilla gelato.
“Cooking in Bali is always inspiring; the island’s spirit and local produce spark creativity,” said Chef Gallo. Chef Medaglia added, “This collaboration was about merging precision with passion, creating harmony on the plate.”
