Jakarta’s food culture is constantly evolving, and a new stage is now where fire takes the spotlight. Embers Open-Fire Grill, Swissôtel Living Jakarta Mega Kuningan’s signature restaurant, brings an experience shaped by open flames, bold flavours and a sense of connection that dining over fire naturally creates.

The restaurant tells its story through the glow of embers. Fire becomes the cooking method and the narrative thread, linking culinary traditions from different parts of the world while highlighting local influences. At Embers, Japanese discipline meets Indonesian character, creating a balance that feels modern yet rooted in heritage.

The design amplifies this concept. When guests enter, the open kitchen draws attention as flames spark, smoke rises and chefs work with precision in full view. It is as much performance as it is preparation, with the sound of sizzling beef and the aroma of charred citrus setting the room’s rhythm.

The menu reflects this energy, celebrating simple ingredients elevated by fire. Starters include beef yakitori skewers, an elegant take on Japanese street food using Australian black angus beef, and tuna tartare with sashimi-style tuna, citrus and crisp seaweed served in a build-your-own style. For comfort, the smoked pumpkin soup arrives with vanilla and Japanese chilli, finished with a swirl of live smoke.

From the grill, meat lovers can choose Tajima wagyu ribeye, tomahawk steak, or smoked wagyu brisket slow-cooked until tender. Seafood is no less considered, with highlights such as grilled Barramundi with shiso lime dressing and prawn skewers glazed with soy–mirin and brushed with tare sauce, served with Andaliman sambal. To finish, desserts like charred pineapple flambé and poached pear with charcoal-infused ice cream continue the flame story.

Adding another dimension, the Behind Bar concept shifts with the day. Refreshing by daylight and interactive by night, it invites guests to talk with bartenders, watch the process and try house-made cocktails in a lively setting.
