After two years as head of pastry at Epicure, Chef Yu Tanaka is promoted to his dream job.
Legendary hotel Le Bristol Paris has announced the appointment of Yu Tanaka to the role of pastry chef. The Japanese born is no stranger to the property, as his previous position was head of pastry at the hotel’s three-Michelin-starred restaurant, Epicure.
Inheriting pastry legacy from his father who is also classically French trained, Tanaka decided to follow in the footsteps, and at only 18 years old, he moved to France. From 2009, he has been working in Sadaharu Aoki, as pastry chef of Il Vino and Hotel La Reserve as chef de parties.
In 2016, he became sous-chef at Epicure. Executive Chef Eric Frechon found Tanaka’s pastry skills excellent, and mentored him for five years, before promoting him into head of pastry of the multiple award-winning restaurant.
“I learned French pastry making in France, so this will be the foundation ofmy work, although I’d also like to bring a light Japanese touch to connect with my origins,” Tanaka comments.
