Exclusively created by seasoned Japanese Chef Ryoichi Kano, who helms an artistic team of culinary professionals, these fusion dishes highlight a cutting-edge melding of French and Japanese culinary techniques and ingredients with a produce-driven approach, inspired by the freshest, finest ingredients – some specially sourced from Japan – and Japanese-style customary respect. Trained in classic French cooking techniques, Chef Kano began creating fusion cuisine as Head Chef at Au Bec Fin in Kyoto, introducing local Kyoto vegetables (kyoyasai) and Japanese culinary elements into French dishes.
Chef Kano’s divine Japanese-French fusion creations come showcased in a la carte and set menus for lunch and dinner, exquisite dishes that reveal fine examples of meticulous Japanese precision in food preparation and a reliance on fresh, seasonal ingredients.
A universal house favourite is the wonderfully creamy foie gras terrine, accompanied by a tart tropical fruit sauce and wrapped with wafer-thin, Japanese pickled daikon for a contrasting “bite”. Another signature, Festin “Hassun”, here, Japanese garden style, comprising small tasty side dishes, recreates the “second course” Kaiseki feast, regarded as Japan’s most expensive, sophisticated cuisine incorporating around 14 courses. Other notables include Amadai Ochazuke, with pan-fried Japanese Amadai served ochazuke style, and risotto with dashi and hiziki seaweed.
Lewin Terrace’s cellar stocks a well-conceived collection of fine wines and rare vintages totalling more than 100 labels, with a balance of French and Old and New World wines that include hard-to-find Japanese wines – sake is also available. Top-grade wine and food pairing menus come accompanied by the discerning services of an award-winning Chief Sommelier.
