Hamachi crudo, Almont Mint & Salmon Roe

In collaboration with The Ritz-Carlton Jakarta, Pacific Place for the 2nd year running, Maggie Joan’s Singapore had the honour of throwing an exclusive wine dinner on 1st August. Gourmands and lovers of Mediterranean cuisine of Jakarta were delighted by the exciting culinary temptations crafted by the restaurant’s new Head Chef Seumas Smith.

To start off the delightful evening, the first dish served was Hamachi crudo topped with salmon roe on a bed of almond sauce and garnished with mint. The Hamachi crudo is firm and luscious, while the salmon roe is fresh and flavoursome, both were complemented beautifully by the mild almond sauce. A lovely cocktail of blue gin, honey, elderflower syrup and tonic water rounds off the entrée.

Next up is a refreshing and adventurous salad of barbecued beetroot, smoked crème fraiche, burnt honey and pomegranate. The medley of tastes and textures were paired exquisitely with the tart and fruity Spring Riesling Waipara, NZ.

The highlight of the meal is the mains, which was a sublime dish of duck breast with plum sauce, carrot puree and sheafs of purple kale, accompanied by a glass of Goldeneye by Duckborn Pinot Noir, USA.

For dessert, diners were treated to a chocolate and cherry parfait with hazelnut cream, chocolate cremeux and cherry sorbet which was accompanied by a flute of Sciandor Banfi Moscato d’Asti DOCG, Italy.
