The renowned chefs of Mandapa, a Ritz-Carlton Reserve, made their mark with two showings for the recent Ubud Food Festival, inviting guests to celebrate the rich Balinese culinary heritage. For the Magic of Mandapa dinner, the resort’s talented culinary team, Executive Chef Maurizio Bombini, Executive Sous Chef Bayu Retno Timur and Chef de Cuisine Eka Sunarya, created an indulgent, distinctly Balinese eight-course degustation menu infusing fresh herbs and vegetables from the resort’s organic garden served in a magical setting between the pool and the rice fields. Presenting modern Indonesian and Balinese cuisine, guests were in awe of the innovative creations, including lobster pesmol custard, foie gras in nutmeg broth inspired by Indonesia’s oxtail soup and the roasted quail with semur hati ginger.
