Located in the historic neighbourhood of Menteng, Silk Bistro was built on the former residence of a prominent army general. Keeping the house’s old structures and layout, the 166-capacity restaurant retained the best of the mid-century architecture, such as the vintage window bars, the patterned floor tiles, the wide, bright windows and the spacious garden in the back.
The restaurant is led by Chef/Owner Freddie Salim, a Sydney graduate who spent his whole career working in the Australian city’s top kitchens, such as Altitude Shangri-La Hotel, Longrain, Sokyo, Merivale’s infamous The Newport and Nu Bambu. Always an Indonesian and, of course, Asian at heart, in 2020 he returned to Indonesia to pursue new ventures in Jakarta, before finally opening Silk Bistro late last year.
His Asian roots and influences became the inspiration for the restaurant’s menu. Paying homage to his family, Chef Salim creates innovative dishes that evoke bold flavours and textures that are Asian, while implementing different cooking techniques to elevate the cuisine even further.
