Sushi Ta-Ke in Hong Kong is introducing Hirofumi Kojima as its new Sushi Head Chef.
One of Hong Kong’s most renowned sushi restaurants, Ta-Ke, is delighted to welcome chef Hirofumi Kojima into the team. As a talented apprentice of chef Mamoru Sugiyama from Ginza Sushi Kou Honten in Tokyo, chef Kojima arrived in Hong Kong to share his craftsmanship and passion for Edomae sushi with food connoisseurs.
As a lover of Japanese cuisine since he was little, chef Kojima had to work hard to become a sushi chef under the guidance of chef Sugiyama. As a sushi chef, he holds the responsibility to create amazing flavours from each ingredient. With his new role in Hong Kong, he hopes to bring the freshest and most authentic Edomae sushi to discerning diners.
