The signature Pavlova at Biku’s tea lounge-cum-dining room is one that keeps guests coming back more times than they’d like to admit. Pavlova’s are done best when they are kept simple, and that’s exactly how this Australian favourite is served here. Made up of just a few ingredients, a light meringue crust comes smothered in fresh whipped cream and tropical fruits like mango, strawberries and passionfruit. A strawberry coulis is then dribbled over the top, adding a little extra sweetness to each bite. As everything melts together in the mouth, puffs of the delicate meringue seem to just fizzle away on the tongue. It is surprisingly light, and despite the giant portion size, it’s easy to find yourself licking the bowl clean.
