Prepared by Executive Chef Jovan Koraag and his culinary collective, the Sunday Frestro Degustation Brunch features a range of pan-Mediterranean inspired dishes that showcase the talent of the outstanding team, as well as offering an insight into Chef Mandif’s culinary philosophies.
Frestro’s airy and stylish bar is the first thing you encounter when you walk up the steps and Ayip Dzuhri, the man behind the drinks, will be more than happy to mix you up a convivial pre-brunch cocktail or two. You can enjoy your brunch in the bar at one of the sofas with low tables, or more traditionally in the chic open-kitchen restaurant to the rear – it’s your choice.
The journey typically begins at sea with aguachile, Spanish mackerel served with habanero, shallot, kyuri and lime, followed by an indulgent seafood platter, a mix of tiger prawns, squid, and mussels served with fennel and saffron. The menu heads inland next to sample the tangy freshness of pickled beetroot and goat’s cheese, followed by a succulent 24-hour braised shoulder of lamb served with tagliatalle, peas and a mint jus.
Splitting the meat courses, a baked pineapple with nut crumble, wild honey and refreshing pina sorbet arrives before the Black Angus chateaubriand with potato and herbs, with the final round being Frestro’s splendid young coconut klappertart.
Attractively priced and paired with some innovative drinks, the degustation brunch offers an alternative to traditional roasts and buffets, taking diners on a leisurely culinary journey that explores a range of flavours and textures. The menu is in constant flux and changes to include the freshest and best produce available on the day.
