The culinary heart of Six Senses Uluwatu, Bali, Crudo is a dinner-only venue with views across the resort’s pools to the Indian Ocean and a menu that embraces fresh local produce. Specialising in Nikkei cuisine, a combination of Japanese and Latin American, the menu is bursting with wonderful flavours.
Sushi and sashimi both feature here, crafted with sustainably caught seafood sourced mostly directly from local fishermen, thus ensuring incredible freshness. The menu changes quarterly and is based on seasonality, but includes favourites like yellow fin tuna, salmon roe and octopus. The sushi rolls are contemporary, such as the Jaiba Brava of soft-shell crab, guacamole, candlenut chilli paste and pickled coleslaw.
The Latin American influence can be seen in the ceviches, which include catch of the day, A5 wagyu and pearl meat, as well as handmade Mexican corn tacos with pork confit or ox tongue. Main courses are a great combination of tastes with dishes like chicken, miso and probiotics, edamame dumplings with cashew nuts and prawns preserved in lime and garlic. All dietary requirements can be catered, including vegan and nut-free.
The interior décor suits the casual fine-dining concept and is predominantly wood with a shoal of fish “swimming” from the ceiling. An open kitchen with seating for direct interaction with the chefs, booths and a private dining area provide plenty of seating choices and the outdoor Crudo Terrace features a Jimbaran-style seafood barbecue dinner under the stars on the weekends.
