Author of “Margarita Rocks” and “Classic Cocktails at Home” and recognised globally as one of the leading figures in the current bartending renaissance, Dre has plied his trade in some truly famous London bars including The Rock Garden in Covent Garden, Oliver Peyton’s Atlantic Bar & Grill, Salvador & Amanda in Leicester Square and Jamie Oliver’s inspirational non-profit bar and restaurant, Fifteen. Whilst across the pond in San Francisco he worked at The Irish Bank and at probably the most famous tequila bar in the world, Tommy’s Mexican restaurant. Back in 2004, Dre formed The Worldwide Cocktail Club, which has consulted on the beverage programmes for legendary venues such as Ronnie Scott’s Jazz Club, Amy Sacco’s Bungalow 8 and the exclusive Alfred Dunhill’s private members club. In 2013 Dre joined PTT Family as director of bars and has been instrumental in creating and developing the group’s award-winning cocktail programmes. As part of that remit, Dre recently opened Akademi, in the lobby of Katamama in Seminyak Bali, behind what is probably PTT Family’s most famous venue, Potato Head, Bali. Along with many other fabulous creations he has revealed The Marmarita, a super twist on one of his favourite cocktails, the Margarita. “We added syrup and aromatic bitters made with mangosteen fruit, utilising the stone, fruit and skin, to the usual tequila, lime and orange liqueur mix. The cocktail is shaken and served straight up in one of our ceramic martini glasses.”

Ingredients

• 45ml el Jimador tequila

• 15ml Cointreau

• 2 dashes mangosteen bitters

• 15ml orange arak

• 25ml citrus juice

• 20ml mangosteen syrup

Preparation

Combine all ingredients in a shaker

– shake and double strain

To Serve

Dried mangosteen salt the rim and garnish with dried orange and dried lime wheels
