Udatsu Sushi, a Michelin-starred restaurant, just opened its doors at FWD HOUSE 1881 in Hong Kong, marking its first venture outside Tokyo. Owner Hisashi Udatsu brings his mastery and blends traditional craftsmanship with a fresh approach to this restaurant. Chef Hiroki Nakamura, a sous chef and protégé of Chef Udatsu, leads Udatsu Sushi in Hong Kong as a head chef.
Set around an intimate 12-seat counter made from a 150-year-old Yoshino Cypress tree, the restaurant offers an immersive dining experience. Contemporary art decorates the walls, while the gentle sounds of jazz in the background play along, accompanying your relaxed conversation with loved ones.
While many ingredients are flown in from Tokyo’s renowned Toyosu Market, Udatsu Sushi also proudly celebrates local Hong Kong produce in its dishes, especially herbs and vegetables.
The dishes come along with unique drink pairings, including artisanal sake and unexpected spirits like agave. All of the seasonal sake is sourced directly from Japan’s hidden gem’s sake houses and chosen personally by Chef Udatsu and his team.
