XO Arbol Before Bed
In 1989, recognising the growing market need, the Patrón Spirits Company, a brand now synonymous the world over with ultra-premium tequila and liqueurs, was created on something of a whim by John Paul DeJoria. Its success was instant and transformed the ultra-premium world of tequila and the premium cocktail market with both its quality and innovative processes and blending. Following its initial success with its peerless tequila, in 1992 Patrón launched XO Cafe, a coffee-infused tequila liqueur. Extensions of this fabulous liqueur continue to appear with the XO Cafe Dark Cocoa and the incredible XO Cafe Incendio, launched in 2012 and 2014 being particularly popular.
These distinct ultra-premium liqueurs have been game changers for bartenders and mixologists, and today form the basis for some of the world’s most sophisticated cocktails. None is more typical than the XO Arbol before Bed, a cocktail created for Patrón by Chad Michael George, president of the Colorado Bartenders’ Guild for Patrón’s Secret Dining Society dinner series.
Recipe
• Ingredients
45ml XO Cafe Incendio, 15ml Citrónge Mango, 15ml orgeat, 15ml half-and-half, 1 egg white, Pinch chilli powder salt (mix of equal parts salt and chili powder).
• PREPARATION
In a shaker, combine all the ingredients, except the chilli powder salt, and shake vigorously without ice for 30 seconds to mix and emulsify the egg whites. Top the shaker with ice and shake again for another 20 seconds.
• TO SERVE
Strain into a coupe glass that’s half-rimmed with the chilli powder salt mix.
