Diners at two Michelin-starred Caprice, the elegantly sophisticated French restaurant at Four Seasons Hotel Hong Kong, are eagerly anticipating refinements to their culinary experience with the arrival of Chef de Cuisine Guillaume Galliot.

Formerly of two Michelin-starred The Tasting Room by Galliot in Macau, which was ranked 39 in Asia’s 50 Best Restaurants, Chef Galliot has a global sensitivity alongside his mastery of technical French cuisine and the vibrancy of Hong Kong’s culinary scene is sure to inspire him to new heights and see new creations on the tables of Caprice in the near future.

Chef Galliot will lead the team of 25 chefs in their exacting creations of flavourful dishes that are light and refreshing and is sure to call upon his personal culinary journey so far, which in the early days saw him at the three Michelin-starred Le Jardin des Sens in Montpellier, France, and later on at the Raffles Hotels in Singapore and Beijing, followed by The Tasting Room in Macau.

Chef Galliot is clearly revelling in the Asian experience as he has continued to collect Michelin stars. Already familiar with Caprice as a diner, he appreciates its gourmet legacy, great produce, outstanding wine list from the Bordeaux and Burgundy regions and truly superb artisanal cheese selection.

With an open kitchen, thoughtful service, breathtaking Victoria Harbour views, Czech crystal chandeliers and modern Chinoiserie décor, the setting is perfect for Galliot’s vision of French cuisine: the flavours of France dancing in unison with the tastes of the world.
