This casual but chic French-Japanese tapas bar and restaurant is a new and unique gastronomic experience on the culinary map of Singapore. A collaborative idea of two talented chefs, Chef Atsuhiko Hagiwara from Ginza Tokyo restaurant and Singaporean Head Chef Jeremy Chiam, who set out to create a refined French menu with a touch of another high cuisine – Japanese. In this way, Le Binchotan embraces two renowned world cuisines, which accentuate and compliment the subtleties of tastes in each of them.

The heart and soul of the restaurant is the use of binchō-tan, which is produced from oak. The binchō-tan is the preferred charcoal choice of Japanese chefs as the final product burns at a lower temperature for a longer time compared to ordinary charcoal, which allows for the development and deep penetration of tastes and aromas within the prepared food.

When you book a table to enjoy a meal at the restaurant, try pork jowl sous-vide infused with katsu curry, then smoked on the binchō-tan and served with Japanese kabocha pumpkin or the Japanese red bream madai topping cold-smoked eggplant with a light touch of shoyu.

Make sure not to miss the amazing selection of house cocktails such as The Gin, The Flower and the Bowtie, which are created by the talented bartenders with the aim of bringing out the unique plethora of flavours at Le Binchotan.
