The skilled mixologists at Sofitel Bali Nusa Dua Beach Resort are always keen to create new drinks and to bring in traditional local elements to entertain their guests’ palates. A Balinese twist on the Old Fashioned caught our eye recently, created by Juni Bent (I Wayan Juniantara), who featured it in the 2016 Diageo World Class mixologist competition, where he ranked in the Top 10 Bali Bartenders. Realizing that the smokiness of Bulleit Bourbon would pair nicely with the local red rice from Tabanan in Bali, Juni roasts the rice then soaks it in hot water to get a tea-like extract. Once cold, he mixes it with Bulleit Bourbon, muddles in some orange jam (oranges are also native to Bali) and serves it in a fishbowl Old Fashioned glass. Try it once and you’re sure to want more!
