At Brasserie Gavroche, found at 66 Tras Street in Tanjong Pagar, esteemed chef and owner Frédéric Colin and his wife, Charlotte have really gone the extra mile in creating their own little piece of Paris in the very heart of Singapore.
Since first opening in 2011, Chef Colin has been wooing diners with authentic Parisian classics prepared from age-old recipes pioneered by his grandfather Henri, who, as he will tell you, has always been the inspiration behind his life-long culinary passion.
Educated at the Jean Ferrandi Paris, he also owns the newly opened Bistrot Gavroche in Sydney and, just over the street from the brasserie you will find his relaxed, Parisian-themed Café & Bar Gavroche.
Before Gavroche, his distinguished career had seen him at the helm of the St Regis Bora Bora and the St Regis Singapore as well as serving time under two Michelin-starred Chef Bernard Joinville and at the three-Michelin starred Restaurant Ledoyen, as chef de partie under the inspirational French Chef Christian Lesquer.

Grandpa Henri’s Baked Pork Terrine with Duck Liver (pâté en croûte)
His elegant plating and his grandfather’s Parisian influence are evident throughout the menu. “It’s hearty, generous and rustic,” he says, and just looking at the substantial portion of Grandpa Henri’s pate en croute et foie gras that’s served up, a wonderful cold appetizer sadly lost on many French menus, one cannot fail to understand exactly what he means.
