In a charmingly sentimental touch, Odette is the name of Chef Julien’s grandmother and, as he states, everything he creates in his kitchen is made in her honour. “I owe everything that I am to my family, especially my grandmother, Odette,” says Julien. “She showed me how the most remarkable dishes can come from the purest ingredients and taught me the importance of adding that ‘little something’ to create dishes that excite the palate and fill the heart.”
Guided by this lifelong respect for seasonality, terroir and artisanal produce, Chef Julien works with some of the world’s best boutique producers to bring to the table his refined and delightfully presented dishes.
Discerning diners are invited to indulge their gastronomic senses with a choice of seasonal degustation menus including four courses for lunch and six and eight courses at dinner, complemented by a selection of delicate canapés and one of Singapore’s most impressive wine lists.
