A multi-sensory destination in Uluwatu, Rocka Restaurant & Bar at Six Senses Uluwatu, Bali is starting the new year with a renewed focus on sustainability.
Situated atop Uluwatu’s elevated cliff on Bali’s southernmost shore, Six Senses Uluwatu, Bali has been an advocate for sustainability in all aspects of its operations. The five-star resort honours its environment with everything from luxurious suites and villas to delicious dining options. Furthering its mission, the resort reintroduces Rocka Restaurant & Bar with a renewed focus on sustainable dining.
Headed by Executive Chefs Ignacio Moreno and I Made Indrawan, diners are taken on a culinary journey that highlights the vibrant flavours of Bali’s rich landscape. The new menu also benefits from the on-site organic garden, which supplies a portion of the ingredients.
During lunch, diners get to enjoy a rich tapestry of Nusantara flavours, with Megibung-style dining on offer. Meanwhile, for dinner, guests get to indulge in a flavour burst of Bali and Southeast Asian cuisines. One of the standout dishes is the Jimbaran Lobster Sambal Ijo, which embodies the restaurant’s dedication to supporting local markets and fishermen.
What sets Rocka apart is not just its exquisite cuisine but also its unwavering dedication to minimising its environmental footprint. The restaurant implements innovative waste reduction measures, utilises renewable energy sources and embraces a farm-to-table ethos that extends beyond mere culinary trends.
