Under the expert guidance of Chef Gerardo Milan, a proud ambassador of Mexican cuisine, the menu at Adriana Cocina & Bar is a culinary treasure trove. Chef Milan’s journey began in 1998 in Atlanta, Georgia, inspired by family meals that celebrated the essence of Mexican culture.

The menu features a variety of flavours, offering dishes that capture the heart and soul of Mexico. Highlights include the smoked short rib barbacoa taco and the refreshing Adriana Ceviche served with crispy corn chips for the perfect crunch. For a heartier indulgence, the lamb mixiote showcases lamb, slow-cooked using a pre-Hispanic technique, smoked and grilled over a wood fire, paired with lentil salad, grilled baby potatoes and pickled vegetables.

E: Can you share your journey as a chef and what inspired you to pursue a career in the culinary world?
A: My culinary journey began in 1998 in Atlanta, Georgia. Growing up, cooking and sharing meals were central to my family and our culture. Those moments around the table sparked my passion and ultimately inspired me to pursue a career as a chef.

E: What brought you to Bali, and what excites you most about working at Adriana Cocina & Bar?
A: Before moving to Bali, I spent over a decade in Jakarta, starting in 2010. What excites me most about Adriana Cocina & Bar is that it’s a Mexican restaurant. As a proud Mexican, it’s incredibly fulfilling to bring the authentic flavours of my heritage to such a beautiful and vibrant island.

E: What is the concept or vision behind Adriana Cocina & Bar?
A: Our vision is straightforward: to become the go-to destination for the best Mexican food and cocktails in Bali. We aim to offer guests an unforgettable experience that blends authentic cuisine with a lively and welcoming atmosphere.

E: How do you strike a balance between authenticity and innovation in your dishes?
A: Authenticity always comes first for me. While innovation has its place, I prioritise traditional Mexican flavours and techniques. It’s about staying true to the roots of our cuisine while occasionally adding subtle, thoughtful touches to enhance the dining experience.

E: What has been your proudest achievement as a chef?
A: My proudest achievement is creating Mexican restaurants that have become local favourites and top culinary destinations. It’s incredibly rewarding to see people embrace and celebrate the food and culture that mean so much to me.

E: If you could invite three people (dead or alive) to dine at Adriana Cocina & Bar, who would they be, and what would you serve?
A: I’d invite my wife, daughter and son. They are my best critics and biggest supporters, making them my perfect guests. I’d serve tacos, ceviches and chilaquiles—dishes that embody the heart and soul of Mexican cuisine.

E: If you could only eat one dish for the rest of your life, what would it be?
A: Tacos, hands down. They’re versatile, packed with flavour and a dish I could happily enjoy every day without getting bored.
