BEEF BRISKET
At The Ritz-Carlton Jakarta, Mega Kuningan’s newly renovated Asia Restaurant, the beef brisket, personally prepared by the restaurant’s sous chef, Ferdian Tobing, is worthy of note. Only premium US beef briskets are selected, then each 6kg brisket is rubbed with a marinade of red wine, gravy and aromatics before being vacuum-packed and cooked sous-vide for 12 hours. After the sous-vide process, the flavourful briskets are basted in thickened gravy before being grilled over charcoal, imparting a pleasant smoky accent. The tender texture of the beef is delightfully complemented by sides of tantalising truffle mash and grilled polenta with blue cheese.
